Not all doughnuts are sweet, and as we have seen, the humble doughnut is more than happy to reside outside its main home of North America (frankly, I don?t blame it). In India, they make vada, the main varieties being urid dhal vada and channa dhal vada. Both are welcome alternatives in our culture unhealthily fixated on processed wheat.
The urid dhal vada at Indian Dine presents a memorable eating experience. These deep-fried vada are uncharacteristically crisp on the outside whilst the inside is (usually) very light and fluffy. Of course, on it?s own the vada is rather bland, yet is thankfully served with steaming sambar and cooling coconut chutney. These additions, along with the loud Bollywood music played inside, are what make the Indian Dine vada something special.
